There are broadly speaking three options for processing a live goat into meat:
For the least expensive method of acquiring a goat carcass, choose from a butcher in your area as a collection point to pick up the processed carcass. This is like a ‘click and collect’ for retail purchasers. You may take the carcass home and cut it to your own requirements, or discuss with the butcher for a price on cutting to your exact requirements.
The first payment to Russett Woods Estate (RWE) is for the farm gate price of the goat ($110 in 2025) and delivery fee to the Western Sydney Meatwork at Picton ($30).
The second payment is to the area butcher you have selected as your collection point. This payment covers the abattoir processing fee, transport to the butcher and the fee for the butcher to hold the carcass in their cool room ready for you to collect.
The following list of collection point butchers in each area will expand as we can make arrangements:

Contact your local butcher and find one that we can consign the goat to you via an abattoir. You pay us for the live goat which is then delivered to an abattoir (delivery fee depends on which abattoir). The abattoir charges a processing fee and delivery fee to your butcher (see this link for details about local abattoirs). You then pay the butcher including any cutting instructions that you may have. In this option, you make two payments:
- First payment to Russett Woods Estate is for the live goat and delivery to the abattoir
- Second payment is to your local butcher which will include the abattoir’s processing fee, delivery fee to the butcher, any cutting fee from the butcher depending on your instructions
Buying the live goat and processing it yourself. Australian law is that you can process an animal for your own consumption but not for resale. In this option you make one payment to Russett Woods Estate for the live goat:
- If you choose to pick up the goat(s) from Bowral you may pay a $50 deposit per goat and the balance on collection
- If you choose to have it delivered to your location you pay for the goat and delivery before we dispatch the live goat to your destination (as per rates on the abattoir page, or make an estimate based on Google maps distance from Bowral to your address @$1.55 per kilometre).
